Description
Homemade dashi packets are an easy Japanese stock recipe that lets kombu, bonito flakes, dried shiitake, or niboshi brew overnight for clean umami flavor. The ingredients are usually placed in tea bags or reusable sachets, then soaked in water in the fridge so the broth slowly extracts without needing much effort. Kombu gives the stock gentle savory depth, bonito adds smoky aroma, shiitake brings earthiness, and dried sardines can create a stronger broth for noodles or simmered dishes.
