Preparing Gilan tandoori bread is a step-by-step and time-consuming process, but its unique taste is worth the effort. In the following, I will briefly describe the steps of preparing Gilan tandoori bread:
Raw material:
1. White wheat (wheat flour): about 500 grams for 4 to 6 loaves
2. Water: about 250 ml
3. Salt: 1 teaspoon
4. Bread liquid: prepared in advance and about 100 ml
Preparation steps:
1. In a bowl, mix wheat flour with salt.
2. Gradually add water and mix with hands or a spoon until fermentation is done and it is ready.
3. Then gradually add the bread liquid and stir until the bread liquid fits into the mixture and becomes toasted.
4. Pour the dough on a dry surface with a little flour and shape the snakes into small balls.
5. Use your hands to make the glupes into flat and relatively thin circles.
6. Heat the oven to about 250 degrees Celsius.
7. Place the fermented breads in a hot oven and let them cook. Baking time depends on the temperature and thickness of the bread, but usually takes about 10-15 minutes.
8. Bake the bread until its surface is golden and hard on the outside, and the inside is soft.
