To make a tasty biryani, start by marinating chicken (or vegetables) with yogurt, spices like turmeric, chili powder, garam masala, ginger-garlic paste, lemon juice, and fresh mint and coriander leaves. Let it rest for at least 1 hour so the flavors soak in well. Meanwhile, cook basmati rice in salted water with whole spices such as cloves, cardamom, and bay leaf until it is about 70% cooked, then drain it.

In a heavy-bottomed pot, spread the marinated mixture at the bottom and layer the partially cooked rice over it. Add fried onions, chopped herbs, saffron milk (optional), and a little ghee between layers to enhance aroma and taste. Seal the pot tightly and cook on low heat (dum) for 25–30 minutes, allowing the rice and meat to cook together and absorb all the rich flavors.

Once done, let it rest for a few minutes, then gently fluff and mix before serving. Serve hot with raita, salad, or gravy for a complete and delicious meal.https://zeengi.com
