Roast Beef & Tranquility: Celebrating the Wins

This past Saturday brought a beautiful moment of peace in the middle of a hectic transition. I cooked a wonderful meal of tender, succulent roast beef, vegetables, and garlic bread, and it absolutely made me smile. After hours of continuous packing, sitting down to a hearty dinner felt like a true blessing.

​This is what I consider a real victory. Managing the stove and oven while navigating chronic fatigue isn't easy, and I have to be incredibly mindful of my safety and energy levels. But pushing through with patience makes the reward so much sweeter.
