Peanut Brittle | Praline Nut Cluster

Description
225 g of Sugar
20 ml of water
1/4 tsp Salt
1/4 tsp Vanila Extract
110 g Nuts
1/2 teaspoon of Bicorbonate of Soda
15 g of Butter
Method :
Line a shallow rectangular tin with silicone paper or buttered grease proof paper.
Add the sugar, water, salt & Vanila extract to a pan and bring to a boil. Stir until the sugar is disolved.
Keep cooking for a furthe 10 minutes so that the liquid becomes a slight amber colour.
Remove the pan from the heat and add the Nuts, Butter & Bicarbonate of Soda. The mixture will foam at this stage.
Return the pan back on the heat so that the mixture warms back up, mix in the nuts with a fork.
Pour the boiling mixture straight into the shallow tin lined with silicone paper and spread it out evenly so that it is about 1/2 inch thick.
Let the mixture cool completely for around 45 minutes befor breaking it up into pieces.
