Ingredients ,
spinach : 800 g
oil : 1/2 cup
Onions sliced : 1 cup
Chicken cube : 1 (optional)
tomatoes chopped : 1-1/2 cup
Red chilli powder : 1 tsp or ast to taste
Coriander powder : 1 tbsp
Turmeric powder : 1/4 tsp
Green Chili : 1
Fresh coriander and mint: 1/3 cup
Cream : 1/2 cup +1 tbs for garnish
Dry fenugreek leaves : 1/4 cup
Butter: 2 tbsp
Cottage cheese: 200 g
Pink salt : 1/4 tsp or as to taste
Directions ;
Wash spinach properly and chop the leaves.
In a cooking pot add oil, add onions cook until golden brown.
Add spinach and cook until water dries up ,
Add chicken cube, coriander powder,red chilli powder, turmeric powder and green chilli & tomatoes and mix well & cook for few minutes then add fresh coriander & mint mix well cover and cook until tomatoes are tender (stir gradually between to prevent bottom from sticking)
Once tomatoes are tender remove from stove and blend well to make paste .
Bring back to on burner add fenugreek leaves and cook for few minutes then add cream and cook until cream dissolve.
Prepare cheese:
Heat saute pan on medium heat and melt 2 Tablespoons of butter in a saute pan Once the butter has stopped sizzling, drop the cottage cheese chunks into the pan sprinkle salt cook until brown flip the chunks and cook on the other side until brown and crispy.
Add paneer cubes in the spinach gravy and simmer for 2-3 minutes.dish out and garnish with cream & butter.
Palak Paneer is ready to serve.
