Oven baked "LATKES"

Ingredients:
10 small potatoes
2 large eggs
1 tsp salt
1/4 cup vegetable oil + 1/4 cup for oiling

Instructions:
Set oven to 170 °/ 350°F
Peel and grate potatoes. Place in a clean towel and squeeze well to drain.
Add eggs, salt, oil, and mix to combine.
Place a baking sheet in a large baking pan and brush it with oil or spray oil.
Transfer the potatoes mix into the pan and tap with oiled hands to evenly flatten
Brush with oil and place in a hot oven for 50 minutes.
Change oven mode to grill and bake for 10 more minutes until the potatoes are nicely golden.
Cut into squares. serve with sour cream
