Oolong Tea

Oolong tea can be identified by color of infused leaf - its darker edges that have been fermented look like black tea leaf and the remaining, much brighter part of the leaf, looks like green tea. Oolong should be infused between two to even 8 minutes, depending on type and personal preferences. The volume of leaves during brewing increases significantly and therefore for best results leaves should be allowed plenty of room to expand.
