My recent Ombre Dream Cake was so addictive that it got me thinking of more options to try in this dream cake box. Mango was on top of my list. With the season drawing to an end yet plenty of mangoes still in the market, it was meant to be! The cake is luxurious and inspired by a tres leches cake. A simple eggless pistachio sponge doused generously with saffron milk, topped with sweet, juicy mangoes that are smothered with a satiny smooth almond cream.
