First time making sausages. Made them Srem-style. The "throw a ball of meat up on the ceiling and if it sticks it's good" is a Slovak tradition we imitated. In the old world my dad never made sausages. I wanted to revive the skills and knowledge. With the exception of how much salt to use and how chunky the ground meat needs to be, everything you see here is what I remember from when I was six watching sausages being made in Cerna, Croatia.
