Description
A sweet, savory, and tangy twist on classic meatloaf, inspired by Hawaiian flavors.
Core Ingredients:
For the Loaves: 2 lbs ground beef, 1 cup panko breadcrumbs, 2 eggs, 1 small onion (finely diced), ½ cup milk.
Hawaiian Glaze: 1 cup crushed pineapple (drained), ½ cup brown sugar, ⅓ cup ketchup, ¼ cup soy sauce, 2 cloves garlic (minced).
For Serving: Steamed rice, extra sliced green onion.
Simplified Procedure:
--Make Glaze: In a saucepan, combine pineapple, brown sugar, ketchup, soy sauce, and garlic. Simmer for 5-7 minutes until slightly thickened. Set aside ½ cup for basting.
--Mix Loaves: In a large bowl, combine ground beef, panko, eggs, onion, milk, and the remaining glaze mixture. Mix until just combined.
Shape & Bake: Divide mixture and shape into 2 loaves on a foil-lined, rimmed baking sheet. Bake at 375°F (190°C) for 40 minutes.
--Glaze & Finish: Remove from oven and spoon the reserved glaze over the loaves. Return to oven for 15-20 minutes, or until internal temperature reaches 160°F (71°C).
--Rest & Serve: Let rest for 10 minutes before slicing. Serve over steamed rice, drizzled with pan juices, and garnished with green onion.
Key Tip:
Use rimmed baking sheets instead of a loaf pan. This allows for better caramelization of the glaze and prevents steaming.
