Description
Ingredients:
Super Fine Sooji/ Rava - 1 Cup
Ghee - 3 Tbsps + 1 Tbsp
Desiccated Coconut - 1/4th Cup
Sugar - 1/2 Cup + 2 Tbsps
Cashews - 2 Tbsps
Cardamom Pwd - 1/2 Tsp
Saffron - a Pinch
Salt - a Pinch
Milk - 2-3 Tbsps
Rose Petals & Desiccated Coconut - Garnish
Process :
* Heat up 1 Tbsp ghee in a saucepan & add in the superfine rava/ sooji - roast on medium low heat for 6-7 mins/ until the raw smell disappears - keep stirring continuously
* Next, add in the desiccated coconut & roast it in the same pan for 1-2 mins - remove the roasted sooji & coconut on a plate & allow it to cool down completely
* Meanwhile, grind some sugar & cardamom until it forms a fine powder - to the same mixer, add in the cooled down roasted sooji & coconut & pulse it until the sooji breaks down & everything is well combined - mixture should be coarse
* Transfer the mix to a plate or a mixing bowl
* Heat up the remaining ghee in a saucepan & add in the chopped cashews - fry the cashews on low until it slightly changes it’s color
* Add the hot ghee along with the cashews to the sooji mix along with some saffron infused milk & a pinch of salt
* Knead the dough & shape it into small balls/ ladoos - add the milk as needed to bind the dough
* Coat the ladoos in some desiccated coconut & rose petals - Serve & Enjoy
