Here are the things you will need:

4 pounds of charcoal
Hawaiian salt
Adobo Seasoning

Here's how it works...
Season your pork belly the night before with Adobo and salt.
Score the skin with a sharp knife.
Lay the belly, skin down & cover.
Add around 16 pounds of charcoal on top of the box and spread it evenly.
After 1 hour, flip the meat & add 8 pounds more of charcoal.
Wait for another 60 minutes, and check again.
If it’s as brown as you want, go ahead and serve! Viola!
