Cassia gum is derived from the endosperm of the seed of the Cassia Tora plant. The plant belongs to the Leguminosae family. It mostly grows in India as a wasteland rainy season weed but is also sometimes cultivated on purpose. It is collected in the months from November to January when the plant is ripe. By some industrial processes, the endosperm halves are separated from the husk, which is then milled to obtain Cassia gum powder.
