This Noodle Dish Comes With Over 60 Toppings

Cart noodles are Hong Kong’s ultimate fast food. When you order, you shout your choice of noodles, pick some toppings, and get a bowl of noodles sent right to your table in less than a minute.

They were once ubiquitous in Hong Kong in the 1960s and ’70s, when you could find noodle vendors on almost every street corner. Nowadays, you won’t find cart noodles on the street anymore, but there are still stores continuing the tradition. We went to a Michelin-recommended cart noodle shop to see how they’re made.
