This week on Burger Lab, Top Chef winner Richard Blais looks to chilly Scandinavia for inspiration. It turns out the land of surstromming also churns out the delectable dish known Stateside as Swedish meatballs. The ultimate comfort food, Swedish meatballs are usually served on mashed potatoes and smothered in gravy and lingonberry sauce, but chef Richard Blais' recipe calls for one big, ginormous meatball made with veal and pork for that perfect amount of richness and fat content that is first fried and then braised in a bath of rich gravy. How can you go wrong when a burger condiment is gravy? How about when another is butter mashed potatoes?? That's right, Blais makes a condiment out of equal parts butter and equal parts mashed potato and kicks it up with some caviar cream. He tempers all that heaviness with lingonberry sauce, tangy marinated cucumbers and pickled beets, all topped with Norwegian Gjetost goat cheese and served in a dill-seasoned brioche bun. Bork bork bork! The Swedish Chef would be proud!
