Sushi

Gizzard Shad [sour taste]

Sushi represents typical Japanese curture 'wabi-sabi' (modest and beautiful)
Japanese-Sushi resembles music (Introduction-changing tempo-Conclusion)
The Sushi course starts from weak-tasting fish like squid and sea bream.
Then we eat tuna and medium-fatty tuna (gradually enjoying strong-tasting fish)

Suddenly the tempo has changed.(tasting sour taste[Gizzard Shad] ,
boild shrimp and rolled sushi)

Finally we conclude the course with Anago(a conger eel with sweet taste) and Japanese rolled omelette. Each Sushi is easy for pick up and we can enjoy colorful arrangement.

Unfortunately, it is difficult for us to get some kinds of shells and other precious fish because of overfishing and environmental influence. Hopefully, people in the world try to avoid overfishing and enjoy this fascinating sushi permanently.
