Today, sushi is a culinary favorite of millions around the world, from the heart of Texas to the streets of Moscow. Once a Japanese delicacy, the demand for sushi has exploded across the globe. The nerve center of the sushi trade is Tokyo's Tsukiji market, where the daily catch is delivered on ice, in custom-made wooden boxes called "coffins." More fish flow through Tsukiji than any other market on earth. More money, too: more than $4 billion a year. This phenomenal growth in the demand for sushi has come at a cost: overfishing has led to depleting fish stocks, which in turn has threatened the balance of the ocean's ecosystems. Is the current sushi trade sustainable? What can be done to ensure that the prized Blue Fin Tuna exists for future generations to come?
