4 - 6 lbs Potatoes (washed, peeled, sliced)
8 - 10 sprigs of fresh Thyme
Salt and Pepper to taste
6 tbsp each of Salted Butter and Extra Virgin Olive Oil
3 - 4 Shallots peeled and cut with the grain
Roast in oven for 1 hour @ 375* F
