Olive Tea Cake

- Beat 1 egg (at room temp) with 60gms caster sugar and 1tsp orange zest until smooth.

- Slowly pour 50ml Extra virgin olive oil into bowl while mixing, until creamy.

- Whisk in 100gms all-purpose flour (sifted), ¼tsp baking powder and ¼ tsp salt.

- Spoon batter into greased mini bundt moulds or cake tins and bake for 10-12mins or until a skewer comes out clean when inserted into the centre.
