CUCUMBER LIMEADE
INGREDIENTS
2 Cucumbers (Peeled and sliced)
1/2 cup of water
4 Key Limes
3 Tablespoons of pure cane sugar
1 Liter of Water
INSTRUCTIONS
In a blender mix cucumber, 1/2 cup of water and the juice of four key limes until pureed.
In a medium bowl, using a mesh food strainer, drain the liquid from the cucumber mix using a spoon; stirring and pressing down the cucumber puree to the strainer to remove all the liquid.
Add the mix to a jar with spoon and add water to fill to about 1 litter and stir in sugar.
Serve with ice and enjoy!
APPLE COOKIES
INGREDIENTS
6 apples
6 tablespoons peanut butter or any spread of your choice.
Walnuts
Coconut shreds
Chocolate chips
INSTRUCTIONS
Slice apple with sharp knife into thin rings and remove core.
Using a butter knife, spread peanut butter over one side of ring.
Top with walnuts, coconut shreds, and chocolate chips.
STRAWBERRY BRUSCHETTA (4-5 SERVINGS)
INGREDIENTS
1 cup strawberries, hulled and diced
1 tbsp. sugar
1 French baguette, sliced on a bias
4 oz. goat cheese
1 tbsp. olive oil
2 tsp. balsamic vinegar
¼ cup minced basil leaves
Freshly ground black pepper
INSTRUCTIONS
1. Combine the strawberries and sugar in a small bowl with spatula or spoon; toss to combine. Let the berries macerate for about 30 minutes so that they begin to release their juices.
2. Cut the baguette into thin to medium slices
3. Spread a thin layer with knife of goat cheese on top of each baguette slice.
4. Top each slice with spoonful of the strawberry mixture.
5. Lightly drizzle olive oil and balsamic vinegar over the slices.
6. Top each slice with the basil leaves and cracked pepper, to taste.
