Golbaengi Bibimguksu (Spicy Whelks with Noodles)
"Golbaengi Bibimguksu" or spicy whelks with noodles is one of the top ten dishes Koreans enjoy with alcoholic beverages. Chewy whelks in spicy, sweet, and sour sauce make a delectable for people of all ages-both young and old.

■ Ingredients
500g whelks
100g somen noodles
1 sprig spring onion
1 onion
5 cloves garlic
4 small pieces kelp (2cm x 3cm)
1/4 lemon
baby greens and sesame seeds

Seasoning
1/2 makgeolli (Korean rice wine)
3 tbsp gochujang (Korean red chili paste)
2 tsp vinegar
2 tsp sugar
1 tsp sesame seeds
1 tsp sesame oil
1/2 clove garlic, chopped

[seri] Samgyeopsal Gui (Pork Belly with Apple)
Juicy slices of pork belly meat known as “Samgyeopsal” is one of the most popular Korean dishes around. Most people like to grill the meat and eat it as is. But Seri offers a different flavor using a sweet and spicy sauce complemented by apple slices.

■ Ingredients
400g pork belly
coarse salt, pepper, olive oil, and parsley
1/2 apple
1 tbsp honey
2 tbsp white wine
olive oil and salt (as needed)
1 tsp pine nuts (optional)
80g sweet pumpkin
4 spears asparagus
1 oyster mushroom
1 head lettuce
1 head romaine
1 bundle perilla leaves

Sauce
2 tbsp doenjang (Korean soybean paste)
2 tbsp gochujang (Korean red chili paste)
1 tbsp maesil (green plum) syrup or honey
2 tsp garlic, minced
2 sprigs chives
10ml sesame oil
sesame seeds and nuts (walnuts, peanuts, and sunflower seeds)
