KUNAFA - Mrs Vahchef

Mrs.Vahchef is very fond of cooking and her Recipes are very unique and fit for busy women specially working women\r
\r
Kunafa is like the Middle East version of a cheese danish and also an Arabic dish, prepared for the month of Ramadan. Its base is mild, stretchy white cheese-very like fresh mozzarella or paneer-with sweet sugar-based syrup and rich topping.\r
\r
INGREDIENTS:\r
\r
Corn flour ½ tsp\r
Milk 100 ml\r
Sugar 1 cup\r
Water As required \r
Rose water 1 tbs\r
Raisins 10 nos\r
Cashew nuts(chopped) 10 nos\r
Almonds(chopped) 10 nos, \r
Seviya 2 cups\r
Butter 2 tsp\r
Ghee 2 tsp\r
Pistachios(finely chopped) 1 tsp\r
\r
METHOD:\r
\r
1. Boil milk with corn flour in a pan and cook for 2-3 min so that it forms slight thick mixture.\r
\r
2. Boil sugar with little water in a pan to make like a gulab jamun syrup, at last add rose water boil it for 1 min and switch off flame.\r
\r
3. In a bowl add raisins, cashew nuts, almond, seviya, butter and slightly crush it.\r
\r
4. Add ghee and mix it.\r
\r
5. Take a baking tray and place one layer of seviya pour some cornstarch milk mixture, add second layer of seviya, pour some cornstarch milk mixture, add last layer of seviya and press it with hand.\r
\r
6. Bake at 180 degree for 15 mins until it slightly golden in colour.\r
\r
7. Loosen edges with knife and demould into a plate.\r
\r
8. Pour sugar syrup on its top and garnish with pistachios.\r
\r
9. Now kunafa is ready to serve.
