Samosas may be nothing new to you. After all, these delicious stuffed Indian dumplings can be found all over Asia and Africa in some form or another. The following recipe, however, will definitely be something new for you! In fact, these tasty pockets are perfect for anyone trying to eat a bit healthier because we've opted for an oven-baked dough that's twice the taste and half the calories.
You'll Need:
For the batter:
- 9 oz flour
- 1 tsp salt
- 4 tbsp vegetable oil
- 4 fl oz water
- flour for your work surface
- water
For the filling:
- 2 tbsp vegetable oil
- 1 onion, minced
- 1 red chili pepper, cut into rings
- 1 garlic clove, minced
- 1 tsp ground cumin
- 1 tsp cinnamon
- ⅓ tsp ground turmeric
- 1 tsp fresh ginger
- 5 fl oz water
- 1½ oz frozen peas
- 10½ oz boiled potatoes
You'll also need:
- almond milk
Here's How:
1. First mix the flour, salt, oil, and water into a smooth dough, cover with plastic wrap, and let sit for about 15 minutes.
2. Flour your work surface, roll out a thin portion of the chilled dough into a circle with a rolling pin, and cut the circle in half. Wet your finger with water and run it down the left side of the center cut. Fold the left dough portion into a triangle and repeat with the right portion. Roll out more dough circles from the rest of the chilled dough and create more dough triangles.
3. To start on the filling, heat the oil in a pan and fry the onion, chili pepper, and garlic together with the spices. Pour in the water and finally add the peas and potatoes. Thoroughly mix all the ingredients in the pan, stuff the mixture into the dough triangles, and then carefully seal them so they won't split open in the oven.
4. Place the stuffed dumplings on a sheet pan lined with parchment paper and brush almond milk over the samosas. Bake at 375°F for 25 minutes until golden brown.
5. Serve the delicious samosas with a mango chutney dip which you can easily make yourself: mix 2 tbsp white wine vinegar, 1 diced red chili pepper, 1 minced shallot, 1 diced mango, 1 tbsp sugar, and 1 pinch of salt.
