Hot cross blondies | Easter with Lidl
Description
Looking for a twist on classic hot cross buns? In this sponsored collaboration with Lidl, Michelin starred chef Kevin Love mixes things up with a recipe that’s part carrot cake, part blondie (spoiler alert: it’s amazing). Enter Mumsnet blogger Emma, of BrummyMummyOf2, and star bakers Erin and Ethan who were more than happy to get stuck in with the fun of Easter baking.
Recipe
Ingredients
Blondie mix:
100g white chocolate chopped
25g butter
1 egg
50g demerara sugar
50g flour
170g cooked and mashed carrot
25g chopped dark/milk chocolate
1tsp vanilla extract
Orange glaze:
1tbsp smooth orange marmalade
2tbsp hot water
Icing:
120g icing sugar
10ml warm water plus extra if needed
Method
Pre heat oven to 180c
1. Melt the white chocolate and butter together in a bowl over barely simmering water until smooth then allow to cool for 5 mins
2. In a separate bowl whisk the sugar and egg together until fluffy then add the vanilla extract followed by the melted chocolate mixture.
3.Sift in the flour and fold together then add the cooked carrot and chopped dark/milk chocolate and mix until fully combined.
4. Pour into cake pop moulds and bake in the oven for 10-12 mins.
5. Remove from the oven and allow to cool for 10 mins before removing from the mould and then cool completely.
6. Make the orange glaze by mixing the marmalade with the hot water until the consistency of runny honey, brush the glaze over the blondies.
7. Make the icing by mixing the sugar and water together until smooth, then pipe or drizzle a cross on top of the blondies.
