Delicious Tomato Spinach Rice

Ingredients-1 cup spinach,2 medium sized tomatoes, 1 large onion finely diced,1/2 tsp mustard seeds,1 1/2 tbsp soaked chana dal,1-2 medium- sized red chillies,1 tsp cumin seeds,1 inch ginger grated,1tsp garlic chopped,1/2 tsp sambhar masala,6-8 curry leaves,green chillies,4 cups cooked rice,1-1 1/2 tsp ghee,salt,pepper,cilantro for garnishing Preparation-Heat the ghee in a saucepan over a medium flame. Put in the mustard seeds. As soon as the seeds start to pop, put in the red chillies,green chillies and diced onions.Add the dry spices,turmeric powder,cumin seeds,garlic,ginger and soaked chana dal.Put in the tomatoes,sambar masala,salt,pepper and mix well.Add the rice and mix well.Add the curry leaves and spinach.Remove from the heat. Spread the rice in a shallow vessel.
