Shrimp Cooked with Mushrooms
Shrimp cooked with mushrooms is a delicious and nutritious dish that combines the natural sweetness of shrimp with the rich aroma of mushrooms. Here’s a simple recipe to make it at home.
Ingredients:
300g fresh shrimp
200g mushrooms (straw mushrooms, shiitake, enoki, or oyster mushrooms)
1 shallot
1 stalk green onion
1 small piece of ginger
500ml broth (bone broth or water)
Seasonings: salt, pepper, fish sauce, cooking oil, MSG (optional)
Instructions:
1. Prepare the ingredients:
Clean the shrimp, peel, and devein them. (You can keep the tails for presentation.) Marinate with 1/2 teaspoon salt, a pinch of pepper, and a little fish sauce for 10 minutes.
Wash the mushrooms and cut them if they are too large.
Mince the shallot, slice the ginger, and chop the green onion.
2. Sauté the shrimp:
Heat 1 tablespoon of oil in a pan, sauté the shallot until fragrant, then add the shrimp. Stir-fry until the shrimp turn slightly firm, then remove them from the pan.
3. Cook the broth:
In a pot, bring water or broth to a boil and add the sliced ginger.
Add the mushrooms and simmer for about 5 minutes until they become tender.
4. Finish the dish:
Add the sautéed shrimp to the pot and cook for another 2-3 minutes.
Adjust the seasoning to taste.
Turn off the heat and sprinkle chopped green onions and a pinch of pepper on top.
Serving suggestion:
This dish is best enjoyed hot and pairs well with rice or noodles. You can also add leafy greens or a mix of mushrooms to enhance the flavor.
