Corn Coconut Ladoo

Description

Recipe to prepare "Corn Coconut Ladoo":

Ingredients:
1 bowl/150 gms fresh sweet corn
100 gms coconut, finely sliced
2-3 tbsp milk
1 tbsp clarified butter/ghee
1 bowl desiccated coconut/dried and powdered coconut
50 gms cottage cheese/paneer
4 green cardamoms
1 cup sugar
1 cup mixed dry fruits

Method:
Take a mixer/grinder, and grind sweet corn into a fine paste. Transfer it into a bowl.
Grind together coconut slices and milk into a fine paste.
Heat ghee in a pan, and spread it evenly.
Add in crushed sweet corn, and stir until color changes.
Add crushed coconut, and stir for around 2 minutes until ghee floats out.
Add 2-3 tbsp desiccated coconut, and stir well for a while.
Grate in cottage cheese, and mix well.
Add 2 green cardamoms and sugar; stir again until moisture dries out and consistency becomes thick.
Add 2 green cardamoms more, and mix well.
Put off the flame, and let it cool to room temperature.
Transfer into a bowl.
Take small (lemon-size) portion of the mixture in your hand, and roll it into a round shape. Dust it with the desiccated coconut and coat properly. Garnish with a cashew nut on the top.
Repeat the step to prepare remaining laddoo. Garnish each with a different dry fruit.
Make one big laddoo to place it at the centre among other laddoo.
Corn Coconut Laddoo is ready to serve.
