Chunky Cod with romano peppers and avocado

On one of my recent trips over to London my cousin Barry introduced me to a wonderful couple of shops that stocked the most amazing fresh ingredients which made my job of coming up with a recipe very easy indeed. I am a big believer that good food should be very simple and this dish is a classic example as the flavours are simple, clean and fresh. Let us know how you get on cooking this one!
