Chicken in chipotle cream

Description
This is a very simple Mexican recipe with a slight touch of chipotle.
Ingredients:
6 chicken pieces
4 tomatoes
3 chipotle chili peppers
¼ onion
1 garlic clove
1 cup of cream
¼ teaspoon paprika
½ cup chicken broth
2 tablespoons olive oil
Salt to taste
Black ground pepper to taste
Preparation: 40 minutes
Serves: 6 personas
Preparation:
Dice the tomatoes and finely chop the chipotle chili peppers, onion and garlic clove.
Heat the olive oil in a casserole and when it is hot, fry the chicken pieces, flipping with thongs until they look golden brown on all sides. Remove from the casserole and set aside.
Fry the chopped garlic and onion in the same casserole for a couple of minutes. Add the diced tomatoes and continue cooking 5 more minutes.
Add the chopped chipotle chili peppers and season with paprika, salt and pepper, mix well to integrate. Add the cream, mix well, add the chicken pieces and chicken broth. Mix, cover and simmer covered at low heat for 25 minutes or until the chicken is done.
Serve with white rice.
