Buttermilk Skillet Cake

Description
Ingredients:
2 1/2 cups (625 mL) all-purpose flour
1 Tbsp (15 mL) baking powder
1/2 cup (125 mL) sugar
1/2 tsp (2 mL) salt
2 large eggs
1 1/2 cup (375 mL) buttermilk
1/4 cup (60 mL) butter, melted and slightly cooled
1 tsp (5 mL) pure vanilla extract
3 Tbsp (45 mL) turbinado sugar for topping
Method:
Preheat oven to 400ºF (200ºC)
Grease a 10” or 11” cast iron skillet.
Combine flour, baking powder, sugar, and salt.
In another bowl whisk the eggs, buttermilk, butter, and vanilla.
Mix the dry into the wet until just combined.
Scrape into the prepped skillet and sprinkle with the turbinado sugar.
Bake for 20 - 25 minutes or until a cake tester comes out clean.
Cool before serving.
