Ingredients:
For the potatoes:
- 2 lbs of potatoes (4 large potatoes).
- 2 tablespoons of olive oil
- Salt
- Pepper to taste
- Garlic powder to taste (optional)

For the chimichurri:
- one bunch parsley
- 1 tablespoon of dried oregano
- 2 cloves of garlic
- 1 cayenne pepper/spicy bell pepper (you can adjust the quantity according to your preferences and tolerance to spiciness)
- 5 tablespoons olive oil
- 1 tablespoon wine vinegar
- 1 teaspoon salt
- 1 pinch black pepper
- 1 teaspoon sweet paprika
